Abstract
Abstract
This community service program (PkM) aims to empower the Rover Scout (Pramuka Pandega) Student Activity Unit in higher education through a multidisciplinary approach encompassing food technology, socio-economics, and early childhood education. The program focused on the utilization of pineapple sourdough in producing gluten-free rice bread as an innovative, locally sourced healthy food alternative. The implementation method consisted of three systematic stages: theoretical introduction, hands-on production practice combined with business management simulation, and evaluation with feedback. The results demonstrated a mutualistic symbiosis where students successfully acquired the technical skills for natural bio-fermentation and formulated a concrete business plan, establishing a strong foundation for social entrepreneurship incubation within the organization. Furthermore, the trained participants effectively transformed into health facilitators, utilizing the healthy bread as an appealing nutrition education medium for early childhood (Cub Scouts/Pramuka Siaga). In conclusion, the downstreaming of university research through this integrated training not only enhances the economic independence of the scout organization but also significantly expands the reach of nutritional literacy in the community.
