Abstract

ABSTRACT

This classroom action research aims to improve the pedagogical and edupreneurship competencies of 61 Early Childhood Education (PGPAUD) students through a multidisciplinary Project-Based Learning (PjBL) approach. The study integrates PGPAUD, Food Technology, and Agricultural Socio-Economics, utilizing pineapple sourdough bread as an innovative, gluten-free nutritional education medium. Conducted in two action cycles, the evaluation focused on the students' ability to design sensory-based pedagogical strategies for early childhood and formulate a logical Cost of Goods Sold (COGS) business plan. The results indicated a significant improvement in classical completeness, rising from 55.7% (34 students) in Cycle I to 86.8% (53 students) in Cycle II. This surge was attributed to the refinement of sensory teaching simulations and comprehensive financial analysis mentoring. In conclusion, the cross-disciplinary PjBL model effectively bridges the gap between theoretical knowledge and practical application, transforming local food innovation into a valuable educational and entrepreneurial instrument for future early childhood educators.
